Millet is a cereal grain. It’s widely consumed in developing countries throughout Africa and Asia as a staple food. Though they look like seeds, millet’s nutritional profile is similar to that of sorghum and other cereals. In the recent times, Millet have gained popularity in the West because they are gluten-free and boast high protein, fiber, and antioxidant contents. In this article, let’s look at Millet Idly recipes that are widely popular in Southern India

Types Of Millets

There are two types of millets—

Major Millets

Minor Millets; major millets being the most popular or commonly cultivated varieties

Major millets include:

  • Pearl
  • Foxtail
  • Proso (or white)
  • Finger (or Ragi)

Minor millets include:

  • Kodo
  • Barnyard
  • Little
  • Guinea
  • Browntop
  • Fonio
  • Adlay (or Job’s tears)

In this article, we are going to use Finger, Kodo & Foxtail varieties to make Millet Idly recipes

Millet Idly Recipes

Recipe 1

Finger Millet Idly (Ragi Idly) Recipe

Serves 2 | Prep Time: 15 mins | Cook Time: 15 mins

Ingredients:

  • Finger millet Flour (ragi): 1 Cup
  • Brown rice/ white rice : 1/2 Cup
  • Split black gram (Available in Indian Stores) : 1/4th Cup
  • Fresh yogurt : 1 Cup
  • Baking soda : 2 pinches
  • Salt to taste

Preparation:

  • Soak Black gram & Brown rice/White rice in water for 6 – 8 hours
  • Wash them thoroughly
  • Make a coarse paste of Brown rice/white rice and a fine paste of Black gram
  • (Note: If you make a fine paste of rice, idly doesn’t come out well)
  • Take a mixing bowl, add millet (Ragi) flour, brown rice, and black gram pastes
  • Mix them thoroughly adding yogurt and baking soda
  • Ferment it for 5 to 6 hours
  • Add required amount of salt, mix it well until salt dissolves
  • Apply oil or butter to idly mold and fill it with batter
  • Take 1 glass of water in idly steamer, bring water to boil, keep the Idly mold in steamer, cook on low flame for 15 mins
  • Take off the mold out of steamer and serve hot idly with ground nut or coconut chutney.

Recipe 2

Kodo Millet Idly(Arikalu Idly)Recipe

Serves 4 | Prep Time : 15 Mins | Cook Time: 15 Mins

Ingredients:

  • Kodo millets (Arikalu) : 1 Cup
  • Black gram : 1/2 Cup
  • Flattened rice : 1/4th Cup
  • Fenugreek seeds : 1 table Spoon
  • Grated carrot (optional) : 1/2 Cup
  • Salt to taste

Preparation:

  • Clean millets and soak them in water for 8-10 hours
  • Mix fenugreek seeds with black gram, wash them thoroughly, soak in water for 6-8 hours
  • Blend millets to a coarse paste, blend black gram, fenugreek and flattened rice to a fine paste
  • (Note: Blending millets into a coarse paste, makes idly spongy)
  • Take a mixing bowl, add all 3 pastes, mix them thoroughly
  • Ferment the mixture for 5-6 hours
  • Add grated carrot (optional) to the mixture
  • Add required amount of salt, mix it well until salt dissolves
  • Apply Oil or butter to idly mold and fill it with batter
  • Take 1 glass of water in idly steamer, bring water to boil, keep the Idly mold in steamer, cook on low flame for 15 mins
  • Take off the mold out of steamer and serve hot idly with mint, coriander, tomato or coconut chutney.

Recipe 3

Foxtail Millet (koralu) Idly Recipe

Serves 4| Prep Time: 15 Mins | Cook Time : 15 Mins

Ingredients:

  • Foxtail millets (korralu) : 1 Cup
  • Black gram : 1/2 Cup
  • Flattened rice : 1/4th Cup
  • Fenugreek seeds : 1 table Spoon
  • Grated carrot (Optional) : 1/2 Cup
  • Salt to taste

Preparation:

  • Clean Foxtail Millets and soak them in water for 10-12 hours
  • Soak black gram and fenugreek seeds in water for 6-8 hours
  • Blend black gram and fenugreek seeds to a fine paste
  • Now add flattened rice to the same blender and blend all of them together to a very fine paste
  • Blend foxtail millets to a coarse paste
  • (Note: Blending millets into a coarse paste, makes idly spongy)
  • Take a mixing bowl, add all pastes, mix them thoroughly
  • Ferment the mixture for 5-6 hours
  • Add grated carrot (optional) to the mixture
  • Add required amount of salt, mix it well until salt dissolves
  • Apply oil or butter to idly mold and fill it with batter
  • Take 1 glass of water in idly steamer, bring water to boil, keep the Idly mold in steamer, cook on low flame for 15 mins
  • Take the mold out of steamer and serve hot idly with chutney of your choice.

You can take millets of your choice and follow the same recipe for any other millet to make delicious and spongy idly
